Date Coconut Rolls Stuffed with Nuts

Date coconut rolls are soft and easily stuffed with nuts or frosted with nut butter. You can buy the rolls at health-food stores or make them yourself by putting pitted dates through a grinder twice, then shaping the ground dates into small logs and rolling them in unsweetened, sulfite-free coconut. They make a delicious, nutritious, potassium-rich cookie and candy alternative. The combination of dates and lightly toasted pecans reminds us of pecan pie filling! Don’t have a health-food store near you? You can buy date coconut rolls from mail-order sources such as Sun Organic Farm; (888) 269-9888; www.sunorganicfarm.com.
